Delicious Honey & Kiwi Slice

Now is the time to use up all those kiwifruits languishing in the fruit bowl! This delicious recipe has been tried and tested by a number of our members – we’re sure you will enjoy it.

Base

1/2 Cup of Honey (we recommend manuka but any variety is fine)
150 Grams Butter
1/2 Cup of Brown Sugar
1/3 Cup Chopped Crystallised Ginger
1/2 teaspoon Ground Nutmeg
1 Cup Flour
1 Cup Rolled Oats
1 Cup Coconut
1/2 Cup Sunflower Seeds

Filling

7 Kiwifruit (regular or gold variety) – peeled and diced
2/3 Cup Sultanas
1 Cup Water
2 teaspoons Ground Ginger
Rind and Juice of 2 Lemons
2 Tablespoons Custard Powder
1 Tablespoon (additional) Cold Water
2 Tablespoons (additional) Flour


Method

Preheat the oven to 200 C then begin making the base. You will need a lightly greased (or non-stick) slice tin, approximately 30 x 20cms

  1. Gently melt the honey, butter and brown sugar together
  2. Add to the dry ingredients and mix well together
  3. Press 2/3rds of the mixture into your tin and set aside

Now make the filling

  1. Bring the kiwifruit, sultanas, water, ginger, lemon rind and juice to the boil in a saucepan
  2. Dissolve the custard powder in a little water and add this to saucepan. Reduce heat and simmer gently until the mixture is nice and thick, stirring occasionally
  3. Set aside to cool
  4. Once cooled pour mixture over base. Now add the additional flour to the remaining base mixture and sprinkle over the top of the filling
  5. Bake in a moderately hot oven (200C) for 20-25 minutes or until the top begins to crisp and caramelise.

Serve this delicious treat warm with whipped cream for dessert or cool and slice into squares for everyday eating
